Gluten free diet

Many people voluntarily avoid grains from their diet because they suspect a gluten intolerance. But can you just eliminate all grains from your diet without any danger?

Gluten is a protein found in all grains. But only the grains containing gliadin also cause chronic intestinal inflammation. Rice and corn, for example, do not cause celiac disease because their gluten does not contain gliadin. The diagnosis of gluten intolerance is made by a blood test and an endoscopy of the small intestine.

Anyone who eats gluten-free without this being medically necessary will eat less whole grain products, which is detrimental to their health. You will not get more energy or become slimmer by not eating gluten. Whole grains contain many necessary fibers, vitamins and iodine. There is a link between low gluten consumption and an increased risk of heart attack. Eating bread daily also protects against reduced thyroid function.
