Can we replace meat?
Some people prefer not to eat meat and fish. But can you just replace meat and fish with vegetables and fruit?
Meat and fish can be replaced by combining different vegetable protein sources or using them with dairy products such as grains with legumes or wheat with cheese or eggs. But meat and fish provide a number of essential nutrients such as vitamin B12 and iron. These are mainly found in animal products.
Vitamin B12 can also be found in milk, cheese, yogurt and eggs. Iron is also found in green vegetables, but be careful, the iron from vegetables will only be absorbed if vitamin C (for example from fruit) is also present. If you consume vegetables together with dairy products, the iron will not be absorbed properly.
To limit your ecological footprint, you don't necessarily have to eliminate meat and fish from your diet. You can safely reduce your meat and fish consumption by 30% without having to compensate with other sources of vitamins and minerals.
