Is kombucha good for our health?

Kombucha is a fermented, slightly effervescent drink usually made from black or green tea. It is known for its possible health benefits, although scientific evidence for this is lacking.

Kombucha is made by fermenting tea with sugar and a symbiotic culture of bacteria and yeast (SCOBY). The fermentation period varies, but usually lasts between 7 and 30 days. The SCOBY (Symbiotic Culture Of Bacteria and Yeast) is a rubbery, pancake-like mass that contains the yeast and bacteria necessary for the fermentation process. During fermentation, the yeast and bacteria digest the sugar, producing carbon dioxide (which makes the drink fizzy) and other byproducts such as acids and a small amount of alcohol.

Kombucha contains probiotics, which are said to contribute to healthy intestinal flora and improve digestion. Since kombucha is made from tea, it contains antioxidants that are said to help fight free radicals in the body. Some followers believe that the acids in kombucha can help detoxify the body, although this has not been scientifically proven.

Homemade kombucha can become contaminated with harmful bacteria or mold if it is not prepared under hygienic conditions. Some people may experience stomach upset or other gastrointestinal problems when drinking kombucha, especially if they are trying it for the first time. Kombucha contains residual sugar and a small amount of alcohol (usually less than 0.5%, but this can vary).
